It’s the end of pistachio season, so grab some of the distinctively green nuts now. Nutty California grows the most pistachios in the country. Skip the dyed red shells—although they are particularly seasonal for Christmas—and look for natural tan shells. You may even be able to find some of the unusual pink pistachios now appearing in markets. They add lovely color accents to food, but a slightly sweet flavor as well. For a dramatic garnish, seek out bright green pistachio butter to spread on crackers with cheese.
