There’s increasing evidence that we need to eat produce to stay healthy. Perhaps you know the saying, “An apple a day keeps the doctor away.” As it turns out, that may be true—although you need more than apples. Fennel is an excellent example of a delicious vegetable that’s packed with nutrients. Thinly slice the bulb to add a gentle sweetness and significant fiber to a salad. It also contains an anti-inflammatory phytonutrient thought to combat cancer. Feeling nauseous? Nibble on the leafy fronds. So, eat your apples, but make room for fennel, too.
