No matter how you slice (or dice) them, tomatoes are loaded with health benefits. They are a great source of potassium, folic acid, and vitamins A, C and E. They help burn body fat, and the bioflavonoids and carotenoids that are concentrated in tomato skin can counteract inflammation. Studies suggest that tomato consumption can reduce the risk of mouth, throat, esophagus, pancreas, ovarian, colon and rectal cancer. Research also shows that men who eat four servings of tomato products a week have a 40 percent reduction in the risk of developing prostate cancer.
