Eric Miller of V. Miller Meats is no soup nazi. He happily ladles out housemade soup to all comers on Wednesdays. Since it’s a butchery, expect meaty favorites like a recent dish made with lamb from Yolo County’s Skyelark Ranch and beluga lentils. “We fail epically when we don’t put meat in the soup,” Miller admits. For $12, you’ll get a quart of soup that may serve two—unless you’re like Miller, who says he can kill a quart by himself.
