Old school

It’s really easy to goof an eggplant Parmesan, especially when it comes to the eggplant’s goopiness levels. Thankfully, Italian Importing Co. makes a pretty decent single-serving parm that you can get to go with a little salad and a piece of bread ($4.99). They don’t goof nothing, with the eggplant’s soft texture retaining a pleasing firmness and the cheese-to-sauce ratio passing this mostly-Italian’s home-cooking standards.
