Here’s a tip they might not reveal in this knife-skills class: Placing an onion in the freezer 15 minutes prior to chopping it will cut back on the tear factor.

Many of us have learned the hard way that uneasy hands around a kitchen knife can lead to a less-than-appealing trip to the emergency room. Although Dracula would never refuse a helping of human blood, most people would find it an objectionable food ingredient. Prevent the loss of appendages and the spoiling of your culinary creation by attending the Sacramento Natural Foods Co-op’s knife-skills class. Instructors Dionisio Esperas and Terese Hollander will lead the hands-on class, covering all the tricks of the blade. Students will discover how to prepare vegetables and debone a chicken breast. The class is slated for Tuesday from 6 p.m. until 8:30 p.m. and costs $45. Grab your knife (make sure it is packed safely for travel) and head to the Sacramento Natural Foods Co-op Community Learning Center at 1914 Alhambra Boulevard.
