The ambrosia that is a perfectly ripe peach straight off the tree—still warm from the sun—triggers an all-too-brief addiction. Like many of you, I wait eagerly for peach season to arrive and then gorge myself. Don’t limit yourself to one kind; try all manner of peach varieties. White peaches tend to be lower in acid, while yellow-fleshed varieties can have a tart and sweet allure. Of the thousands of kinds out there, they’re all best when bought locally and ripened on the tree. If they come from afar, they were harvested unripe and won’t have that same nirvana effect.
