To properly serve a pummelo can be a delicate and time-consuming matter. Once the inch-thick peel is removed, one must strip the bitter pith from the fruit—a tedious task, but it’s not one to be rushed, advise pummelo advocates. For if this chore is neglected, and if the pith remains clinging to the fruit, then 2,100 years of breeding and 18 months on the branch will be wasted, and the mighty pummelo, sweet yet too often misunderstood, will taste like nothing but a grapefruit.
