Most of the country already thinks California is rolling in nuts, and it's true. Our state produces the country's majority of almonds, walnuts and pistachios. New harvest nuts are available in farmers markets, freshly shaken from the trees as fall begins. The drought has affected crop sizes, so prices may be higher this year. They're still a great source of plant-based protein. Try bright-green pistachio butter in pesto or almond butter mixed with soy sauce for a pot sticker dip. Walnuts on oatmeal or salad up your omega-3 intake so you don't go “nuts.”
