Longevity is a prized trait in both Chinese culture and the perilous restaurant business. The popular New Canton, while not the oldest Chinese restaurant in town, nonetheless has flourished for a solid 18 years. When asked the secrets of success, Kim Yuen, one of the owners, first praised her husband Michael’s cooking abilities and work ethic. She also said that the restaurant pays close attention to quality, as indicated by the daily delivery of fresh chickens from New American Poultry, located just down the street. She pointed out that New Canton was the first Sacramento restaurant to offer glazed prawns with walnuts, and “now everybody does it, but ours is the best.” Hey, has the adult video store next door contributed many customers?
