Struggling to keep those resolutions? Pick up some celery, which is at its best in cool weather. It's full of fiber, but can sometimes be bland. Instead of smearing it with peanut butter and raisins for that kindergarten favorite, ants on a log, try using celery in other ways. Look for crisp green stalks with sprightly leaves and slice the large outer ribs to make a San Francisco classic called Celery Victor, in which you serve braised, cold celery with a tarragon vinaigrette. Save the tender inner stalks and leaves to add crunch to future chicken salad or vegetable soup.
