Chickpea history

Pita with hummus is reliably delicious, but from scratch, the pair gets taken to a whole new level of yum. Learn how it’s done in the hands-on TGIF Urban Roots Cooking Class 5-7 p.m. on Friday, April 14, at the Oak Park Multiservice Center. The host, Judith Yisrael of The Yisrael Family Farm, will teach the whole family how to make a Mediterranean meze platter, including hummus, pita and yogurt sauce, all for free. Yisrael says making pitas is “a lot simpler than people think.” You just need to mix ingredients lying around most pantries: flour, eggs, sugar, salt, yeast, olive oil and water. Then, you press flat the dough balls and cook each side on a nonstick pan for a few minutes until they pop. She’ll also provide a side of wisdom: Yisrael will explain how the ingredients traveled all the way from the Arabian Peninsula to Oak Park and, soon, your kitchen. Learn more at www.facebook.com/
