What makes these potatoes “new,”anyway? Hopefully,all of the potatoes you see in the market aren't old, but the so-called “new” potatoes are simply very fresh baby potatoes. They are the waxy kind, which means they have more moisture and make great potato salads—on hot days, avoid food poisoning by making oil-based dressings instead of mayo-based ones. Something salty like olives or bacon works wonders with these little orbs, as well as something vinegary, like capers or chopped pickles. Or, try boiling them until tender, then halve the potatoes and scoop out a little from each cut side. Fill the holes with sour cream and chives or caviar, if you're feeling fancy.
