Best use of bananas

Dear Dr. Fred,
I discovered a new favorite food this week, plantain. It’s like a big, fat banana, but you can cook it up just like potatoes. I made this discovery at Cubamania, a great new restaurant in Sparks. The chef there cooks up fried plantain and plantain patties, and they also deep-fry cactus into something they call yucca rellenas. It was so good and crispy on the outside and flavorful on the inside. Kind of like me. I can hardly remember when fried foods were anathema to me, Dr. F. I’ve gained three pounds this week. Life is good. But I miss you. All the best,
