It's that time again—time to put zucchini in every dish you make! It's just the beginning of the season, so try to pace yourself. Summer squash will be plentiful and cheap at the markets for several months, and well-meaning neighbors will bring them by to share. So what to do with all that squash? Halve and grill them for an easy side. Shred them and toss in a hot pan with oil, garlic and sliced almonds. Make a quick pickle with vinegar and spices for zucchini-less winter days. The ultimate use, which even kids will eat, is chocolate-zucchini bread. It's a veggie and a treat, all in one!
