Lately, it seems that pretty much all I want to drink is rosés. No, not white zin: dry rosés, slightly fruity but not sweet, with flavors of fresh berries. You’ve heard it before, but I’ll say again that they’re the perfect wines for summer—just right with practically anything on the grill, or by themselves, or even (to get just a little white-zin-ish) in a not-too-sweet spritzer. Best of all, good ones are inexpensive. I recently stopped in at Midtown’s brand-new and very welcome addition 58º & Holding Co., a wine bar and shop hybrid, and someone there is also thinking pink: They have a huge display of rosés in a pretty mélange of hues from pale peach to deep fuchsia. They’ll even let you taste before you buy, if they happen to have a bottle open in the wine bar.
