A good, kicky ginger beer is, arguably, one of God's great gifts to humankind—maybe that's what inspired (at least in part) the name for this cocktail at Hook & Ladder Manufacturing Co. Made with Cutty Sark Prohibition Scotch, soda water and the restaurant's own house-made ginger beer, the Presbyterian is light and refreshing, albeit with just enough of a spicy bite to give it some respectful gumption. Unlike its cousin the Horse's Neck, which typically comprises bourbon and ginger beer, this $8 cocktail has a clean finish and pairs well with just about any dish, particularly Hook & Ladder's tasty Brussels & Fries small plate.
