Against the grain

Americans excessively chow down on refined flour and wheat-based products. Give these alternative grains a spin:

1. Quinoa: Sprout, or boil with olive oil. Serve with steamed vegetables, or eat cold with fruit, flaxseed oil and maple syrup for breakfast.

2. Spelt: Use spelt tortillas next time you make burritos. Throw in some green onion, black beans, mango, quinoa and avocado for good measure.

3. Amaranth: Add this high-protein grain to soups, cereals, or eat on it’s own like oatmeal.
